this SUMMER / PITTA dish is from OLIVE MAGAZINE from forever ago. i don’t exactly remember the method but i think its a recipe for the grill but i just bake it all for ease.
quarter-inch slice 4 medium ZUCCHINIS. toss them in some melted GHEE and LEMON JUICE and bake at 400 F oven. then, about 10 mins later toss in one package of half-inch sliced the HALLOUMI to the zucchini pan. continue baking for about 20 more mins or until golden. remove and add some chopped MINT.
the ZUCCHINI is much like cucumber — super cool and sweet — so it sedates pitta’s flames. HALLOUMI cools but also grounds too. GHEE and MINT both cool warm digestion, LEMON is relieves thirst.
