quinoa granola
this granola from MINIMALIST BAKER packs a protein punch, that will not overheat PITTA as most animal proteins do. to keep it extra cool for SUMMER i swapped the ALMONDS for SUNFLOWER SEEDS, added some CORIANDER and dropped the SALT and COCONUT SUGAR.
pre-heat the oven to 340 F. whisk together a 1/4 c of MAPLE SYRUP, 3.5 tbsp of COCONUT OIL and 2 tsps of GROUND CORIANDER. then, combine 1 c of ROLLED OATS, 1/2 a c of WHITE QUINOA and 2 c of SUNFLOWER SEEDS and coat well with the oil and maple mixture. spread evenly on a baking sheet and bake for 25 mins, stirring half way through. keep a close eye on it towards the end to avoid burning.
both the QUINOA & SUNFLOWER SEEDS are tri-doshic, grounding proteins. the OATS are grounding too and good for PITTA in general but should be avoided if skin is irritated. the MAPLE chills and the COCONUT and CORIANDER are both great for hot, irritated skin eruptions.
